Mock Brown Sauce
|Butter||25 Gram (1 Ounce)|
|Dark vegetable stock||600 Milliliter (1 Pint)|
|Yeast extract||1 Tablespoon|
1 In a medium saucepan, add the butter and melt over moderate heat.
2 Blend in the flour mixing to a smooth paste.
3 Cook for about 4 minutes, or until the roux turns dark brown.
4 Remove from the heat.
5 Gradually, pour in the stock, stirring constantly.
6 Return to the heat.
7 Bring the sauce to a boil.
8 Lower the heat.
9 Add in the yeast extract and simmer for about 3 minutes, until the sauce is thick and smooth.
10 Use as desired.
Tastes delicious with a nut roast or savoury quiche.
