Basic Fresh Tomato Sauce

Ingredients
  Onions 2 Medium, finely chopped
  Garlic 4 Clove (20 gm), minced / mashed
  Olive oil/Salad oil 1⁄3 Cup (5.33 tbs)
  Ripe firm tomatoes 5 Pound (About 12 Medium-Sized)
  Minced green onion 1⁄2 Cup (8 tbs) (Including Part Of Tops)
  Green pepper 1 , seeded and chopped
  Salt 1 1⁄2 Teaspoon
  Pepper 3⁄4 Teaspoon
  Anise seed 1⁄4 Teaspoon, crushed
  Oregano leaves 1 Tablespoon
  Rosemary leaves 3⁄4 Teaspoon
  Paprika 1 Teaspoon
  Dry red wine 1 3⁄4 Cup (28 tbs)
Directions

GETTING READY
1.Peel the tomatoes and cut them in eighths.

MAKING
2.Take a Dutch oven or large frying pan and cook onions and garlic in olive oil on medium flame until golden.
3.Stir onions while cooking.
4.Put the tomatoes with onions.
5.Also add green onion, green pepper, salt, pepper, anise seeds, oregano, rosemary, paprika and red wine.
6.Heat the mixture until boiling.
7.Use a wooden spoon to stir it and break the tomatoes.
8.Put the lid on and simmer for 1 hour.
9.Once reduced to 8 cups, take off the lid.

SERVING
10.Serve with snacks or keep it for later use.
