|Parsley sprigs||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Prepared mustard||1 Tablespoon|
|Olive oil||3 Tablespoon|
|Well drained capers||1 Tablespoon|
Chop parsley fine; add garlic and mustard.
Beat in olive oil gradually.
Combine salt and vinegar with oil mixture; beat until smooth.
Fold in capers; serve with flounder fillets.
