Crusty Fillets With Sweet Sour Sauce

Ingredients
  Sole/Flounder / thin fillets 1 Pound
  Buttery cracker crumbs 1 Cup (16 tbs) (Fine Crumbs)
  Flaked coconut 1⁄2
  Egg 1 , beaten
  Evaporated milk 1 Tablespoon
  Salt 1 Tablespoon
  Cooking oil 1⁄4 Cup (4 tbs)
  Sweet sour sauce 3 Tablespoon
Directions

GETTING READY
1. Thaw fish if frozen
2. Cut in serving size portions

MAKING
3. Mix cracker crumbs and coconut Combine eggs, milk and salt and
dip fish in egg mixture
4. Shake off excess and coat wel with cracker-coconut mixture and
heat 2 to 3 tablespoons oil in a 12-inch frypan
5. Fry fillets, a few at a time, over moderate heat for 10 minutes per inch of thickness, but turn fillets only once
6. Drain on paper towels and place in warm oven while frying remaining fillets

SERVING
7. Serve with Sweet-Sour Sauce
