Fresh Cauliflower In Shallot Sauce

Ingredients
  Cauliflower head 1 , core removed (Fresh)
  Prepared dijon-style mustard 1 Teaspoon
  Salt 1 Teaspoon
  Freshly ground white pepper 1⁄8 Teaspoon
  Powdered sugar 1 Teaspoon
  Paprika 1⁄4 Teaspoon
  Egg yolks 3 Large
  Vegetable oil 1⁄4 Cup (4 tbs)
  Tarragon vinegar 1 Teaspoon
  Shallots 1 1⁄2 Teaspoon, minced
  Unsalted butter 2 Tablespoon
  Fresh parsley 1 1⁄2 Teaspoon, minced
Directions

GETTING READY
1) In a steamer, place the cauliflower. Steam till it becomes tender. Set aside but keep warm.

MAKING
2) In a double boiler, add the mustard, salt, pepper, sugar, paprika, egg yolks, oil, vinegar and shallots over a vessel of boiling water.
3) Cook the mixture, while stirring continously, to get a thick mixture.
4) Take the mixture off the heat. Add in parsley and butter and beat well.

SERVING
5) Pour the shallot sauce over the warm cauliflower. Serve hot.
