Garlic Meatballs In Lemon Sauce

Ingredients
Meatballs
Extra-Lean Ground Beef- 1 1/2 pounds
Bread- 3 slices, torn into soft crumbs
Garlic- 4 cloves, minced
Fresh Parsley Leaves- 2 tablespoons, chopped
Fresh Mint Leaves- 2 tablespoons, chopped
Paprika- 1 teaspoon
Salt-1 teaspoon
Pepper- to taste
Eggs- 2 whole

Lemon sauce
Tomato Sauce- 1 8-ounce can
Lemons rind- 2 lemons, grated
Lemon Juice- 1/4 cup
Salt- to taste
Pepper- to taste
Fresh Mint Leaves- 1 tablespoon, minced
Directions

MAKING
1) In a bowl, place together beef, bread, garlic, parsley, mint, paprika, seasoning and eggs.
2) Knead the mixture well and shape into walnut size balls.
3) Place the meat balls in slow cooker.

FINALIZING
4) In another bowl, mix together tomato sauce, lemon rind and juice, seasoning and mint.
5) Pour the tomato mixture over the meatballs.
6) Put the lid on and simmer for 4 to 6 hours.

SERVING
7) Serve hot over the bed of rice.
