Bordelaise Sauce

Ingredients
  Fresh mushrooms 1⁄2 Cup (8 tbs), chopped
  Butter 1 Tablespoon
  Cornstarch 3 Tablespoon
  Beef stock 2 Cup (32 tbs)
  Tarragon leaves 2 Teaspoon, crushed
  Lemon juice 2 Tablespoon
  Red wine 3 Tablespoon
Directions

MAKING
1. In a pan cook mushrooms in butter till tender.
2. In a bowl or a cup mix cornstarch and cool stock together and stir into mushrooms.
3. Cook and stir to boiling.
4. Add tarragon, lemon juice, red wine and a dash of pepper.
5. Simmer 5 to 10 minutes.

SERVING
6. Mix the sauce into salads or use as desired and serve.
