Chicken Breasts In Sherry Tomato Sauce
|Whole chicken breasts||3|
|Flour||1⁄2 Cup (8 tbs)|
|White pepper||1⁄4 Teaspoon|
|Special oil||3 Tablespoon|
|Chopped onions||1⁄2 Cup (8 tbs)|
|Peeled, chopped tomatoes||3⁄4 Cup (12 tbs)|
|Dry sherry||4 Cup (64 tbs)|
|Chicken broth||1 Cup (16 tbs)|
|Minced parsley||2 Tablespoon|
1 Cut the breasts in half, skin and bone them.
2 Prepare a mixture of flour, salt and pepper and dip the chicken in it.
3 In a skillet, heat the oil and brown the breast in it on both the sides.
4 Remove on a platter.
5 To the same skillet, add the onions and saute until browned.
6 Mix in the tomatoes, sherry and broth.
7 Add the chicken breasts, cook covered over low heat for 25 minutes or until tender.
8 Sprinkle with parsley and serve.
