Fresh Tomato Sauce

Ingredients
  Fresh ripe tomatoes 10 Pound
  Vegetable oil 1⁄4 Cup (4 tbs)
  Chopped onions 2 Cup (32 tbs)
  Salt 1 Tablespoon
  Pepper 2 Teaspoon
Directions

1. Cut tomatoes in half; roughly chop; heat oil in 5-quart Dutch Oven over medium heat; saute onions 5-6 minutes or until translucent; add tomatoes, salt, pepper; cover; cook 1 hour.
2. Remove cover; continue cooking 2 1/2-3 hours, stirring occasionally, or until tomatoes are soft, sauce is thick; ladle mixture into blender container, in several batches; blend on low speed until smooth; strain as desired.
