Veal Loin With Mango Sauce

Ingredients
  Mango 1
  Cornstarch 1 Teaspoon
  Water 1 Tablespoon
  Stock 1⁄4 Cup (4 tbs)
  Skim milk 1⁄4 Cup (4 tbs)
  Chives 2 Tablespoon, snipped
  Peeled grated ginger root 1 Tablespoon
  Garlic 1 Teaspoon, minced
  Canola oil 1 Tablespoon
  Veal medallions 4
  Hot cooked rice 2 Cup (32 tbs)
Directions

GETTING READY
1. Peel and seed the mango.
2. In a food processor, process the flesh to make a smooth paste
3. In a small bow, mix the cornstarch with water and add the stock, milk and mango puree. Set aside till required

MAKING
4. Broil the veal about 5 inches from the heat until cooked through, about 5 minutes on each side
5. In a 1-quart saucepan, heat the chives, ginger, and garlic in hot oil for 2 minutes
6. Add the mango mixture and cook again over medium heat for 5 minutes till thick

SERVING
7. Serve the veal with the sauce
