Roast Prime Ribs Of Beef Horseradish Sauce
|Rib roast||4 (Made Of First Ribs: Close-Grained Meat Streaked With Veins Of Fat)|
|Drained prepared horseradish||1⁄4 Cup (4 tbs)|
|Sour cream||1 Cup (16 tbs)|
Wipe meat with damp cloth.
Season with salt and pepper.
Place fat side up in open roasting pan with no water.
Cook, uncovered, in a moderately slow oven, 3250, 18 to 20 minutes to the pound for rare; 22 to 25 minutes for medium, and up to 35 minutes for well done.
If the beef is chilled or frozen, it takes longer to cook.
To Prepare the sauce:
Combine horseradish, salt and sour cream.
Serve in a small bowl.
