Roast Prime Ribs Of Beef Horseradish Sauce

Ingredients
  Rib roast 4 (Made Of First Ribs: Close-Grained Meat Streaked With Veins Of Fat)
  Drained prepared horseradish 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Sour cream 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Wipe meat with damp cloth.
Season with salt and pepper.
Place fat side up in open roasting pan with no water.
Cook, uncovered, in a moderately slow oven, 3250, 18 to 20 minutes to the pound for rare; 22 to 25 minutes for medium, and up to 35 minutes for well done.
If the beef is chilled or frozen, it takes longer to cook.
To Prepare the sauce:
Combine horseradish, salt and sour cream.
Serve in a small bowl.
