Concassed Tomato Sauce

Ingredients
  Olive oil 3 Tablespoon
  Onion 1 Cup (16 tbs), finely chopped
  Celery 1⁄4 Cup (4 tbs), minced
  Garlic 2 Clove (10 gm), minced
  Canned italian peeled tomatoes 1 Pound (1 Can)
  Tomato paste 2 Tablespoon
  Oregano 1 Teaspoon
  Salt 1 Teaspoon
  Sugar 1 Teaspoon
  Fresh ground black pepper To Taste
Directions

Saute onions, celery and garlic in olive oil until onions are transparent not brown.
Add the remaining ingredients.
Cook covered over low heat for about an hour.
Taste and correct seasoning.
