Lite Cheddar Cheese Sauce
|Sharp cheddar cheese||2 Ounce, shredded|
|Shredded fat free cheddar cheese||1 Ounce|
|Evaporated skim milk||4⁄5 Cup (12.8 tbs)|
In a small bowl combine the reduced-fat and fat-free cheeses.
Sprinkle with 1 teaspoon of the cornstarch and toss until coated.
Set the cheese mixture aside.
In a small saucepan, use a wire whisk to stir together 2 tablespoons of the milk and the remaining 2 teaspoons of cornstarch until smooth.
Then stir in the remaining milk.
Cook and stir the milk mixture over medium heat until slightly thickened and bubbly.
Cook and stir for 1 minute more.
Reduce the heat to low.
Then slowly stir in the cheese mixture.
Cook and stir just until melted.
