Pheasant In Cream

Ingredients
  Pheasant 1 , cleaned
  Milk 1 Cup (16 tbs)
  Flour 1 Cup (16 tbs)
  Onion 1 Tablespoon, minced
  Butter 3 Tablespoon
  Sweet cream/Sour cream 1 Pint
  Lemon juice 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Cut pheasant in half down the center of breast.
Wash in cold water.
Dry with cloth.
Cover with milk.
Allow to stand at least 30 minutes.
Remove from milk and dry.
Rub with salt and pepper.
Roll in flour.
Fry, with onion, in butter until golden brown on all sides.
Combine cream and lemon juice.
Pour over bird.
Cover.
Simmer about 45 minutes.
