Delicious With Everything Chicken Sauce

  Bacon slices 4 , finely chopped
  Onion 1 Small, finely chopped
  Garlic clove 1 Large, minced
  Ground chicken/Ground turkey 1 1⁄4 Pound
  Canned plum tomatoes 28 Ounce, drained (1 Can)
  Pitted kalamata olives 1⁄2 Cup (8 tbs)
  Fresh parsley leaves 1⁄2 Cup (8 tbs) (Packed)
  Parsley leaves 1⁄2 Cup (8 tbs) (Packed When Measuring)
  Drained small capers 1 Tablespoon
  Small capers 1 Tablespoon, drained
  Dried red pepper flakes 1⁄4 Teaspoon
  Dried oregano 1⁄2 Teaspoon
  Salt To Taste

1. Saute the bacon in a large skillet over medium heat until it begins to render its fat, 3 to 5 minutes. Add the onion, cover, and cook until soft, 5 minutes. Uncover the skillet and cook until the moisture has evaporated and the onion is beginning to sizzle in the bacon fat, about 1 minute.
2. Add the garlic and chicken, and over medium heat mash and stir the chicken constantly until it begins to crumble, about 2 minutes. Stop stirring, let the chicken cook for 2 to 3 minutes, and then mash it again. Proceed this way until the chicken is no longer pink and is fully broken up, 10 minutes. While the chicken is cooking, chop the tomatoes, slice the olives, and mince the parsley.
3. Add the tomatoes, olives, capers, red pepper flakes, and oregano to the chicken. Cover and simmer for 5 minutes. Remove the skillet from the heat, add the parsley, and season to taste with salt.
