Sauce Tartar

Ingredients
  Hard boiled eggs 2
  Egg yolks 2
  Dijon mustard 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Oil 1 Cup (16 tbs)
  Sour pickle 3 Tablespoon, minced
  Capers 4 Tablespoon, minced
  Parsley/Chives /tarragon 4 Tablespoon, minced
  Lemon juice 1 Tablespoon
Directions

MAKING
1. Sieve the yolks of the hard-boiled eggs.
2.Chop whites coarsely.
3. In a bowl, combine sieved and raw yolks with the mustard and salt.
4.Using an electric beater at slow speed, to the mixture add oil drop by drop initially.
5.Once the oil starts getting absorbed the mixture will become creamy.
6. Pour in rest of oil in gradually.
7.Continue to beat.
8.Add and stir in pickle, capers, and herbs.
9. Add in lemon juice to taste. 10.Now, add in chopped egg whites and combine.

SERVING
11.Serve with fried seafood.
