Sauce Veloute

Ingredients
  Margarine 1 1⁄3 Tablespoon (1 Tablespoon Plus 1 Teaspoon)
  All-purpose flour 1 Teaspoon
  Enriched all purpose flour 1 1⁄3 Tablespoon (1 Tablespoon Plus 1 Teaspoon)
  Chicken broth 3⁄4 Cup (12 tbs)
  Salt 1⁄8 Teaspoon
  Pepper white 1 Dash
  White pepper 1 Dash
Directions

MAKING
1) Heat the margarine till it is bubbly in a small saucepan.
2) Add the flour. Cook the mixture over low heat, constantly stirring, for about 2 minutes. Keep aside.
3) In a separate saucepan, boil the broth.
4) Remove the pan off the heat and immediately add the margarine mixture, a bit at a time, beating well after every addition with the help of a wire whisk.
5) Cook the concoction over moderate heat, constantly stirring, till it has thickened.
6) Use salt and pepper to season.
7) Reduce the heat to low and continue to cook and stir the mixture for about 15 minutes.

SERVING
8) Serve as preferred.
