Chicken Breasts In Mushroom Sauce

  Chicken breasts 2 , split
  Whole chicken breasts 2 , split lengthwise
  Mushrooms 1 Pound
  Butter 3 Tablespoon
  Flour 1 Tablespoon
  Salt 1 Teaspoon
  Half-and-half/Cream 1 Cup (16 tbs)
  Half and half/Cream 1 Cup (16 tbs)
  Sherry 1 Tablespoon
Directions

MAKING
1 Rinse chicken breasts and pat dry.
2 In a 2-quart glass baking dish, place the chicken, skin side down. Cover with waxed paper.
3 Cook in the microwave oven for 8 minutes at HIGH.
4 Turn chicken over; cook covered in the microwave oven for 4 minutes at HIGH, or until tender.
5 Clean and slice mushrooms.
6 Into a 1-quart glass casserole, put mushrooms and butter.
7 Cook uncovered in the microwave oven for 4 minutes at HIGH; stir after 1 minute.
8 Add flour and salt to the mushrooms; mix well.
9 Add half-and-half and sherry; stir.
10 Cook uncovered in the microwave oven for 4 to 6 minutes at HIGH, or until thickened.
11 Stir after 2 minutes, then stir at the end of each 30 seconds.
12 Pour sauce over the chicken.
13 Cover baking dish with plastic wrap.
14 Cook in the microwave oven for 2 minutes at HIGH.

SERVING
15 Serve hot.
