1. Prepare mushrooms by washing and cut them into thin slices from stem end.
2. Halve or slice lengthwise and cook in a saucepan, with butter and seasonings very gently for 10 minutes.
3. With constant stirring add flour and milk gradually and let it simmer another 10 minutes with occasional stirring.
4. Season as per taste and then add sherry.
5. Serve warm.
