Coconut Lemon Sauce
|Sugar||1⁄2 Cup (8 tbs)|
|Water||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Flaked coconut||1⁄4 Cup (4 tbs) (From A Can Of 3 1/2 Ounces)|
|Lemon rind||2 Teaspoon, grated|
1) In a small saucepan, mix together the sugar, salt, cornstarch and nutmeg. Add the water and lemon juice and stir till the mixture is smooth.
2) Over moderate heat, cook the mixture, constantly stirring, till the sauce is thick and has boiled for about 3 minutes. Take the pan off the heat.
3) Add the lemon rind, butter or margarine and coconut and stir till the butter has melted.
4) Serve warm.
