Warm Tomato Pepper Sauce

Ingredients
  Chopped red bell peppers 2 1⁄2 Quart
  Thinly sliced green onions 5 Cup (80 tbs)
  Minced garlic 3 Tablespoon
  Olive oil 1⁄3 Cup (5.33 tbs)
  California tomatoes 8 Quart, seeded, diced
  Diced seeded tomatoes 8 Quart (California Variety)
  Grated parmesan cheese 1 2⁄3 Cup (26.67 tbs)
  Chopped fresh parsley 1 Cup (16 tbs)
  Black pepper 2 1⁄2 Teaspoon
  Cayenne pepper 3⁄4 Teaspoon
Directions

MAKING
1) Use a large skillet to sauté bell peppers, onions and garlic in oil over medium-high heat until vegetables are crisp-tender.
2) Add tomatoes to stir in and cook over high heat until sauce thickens, 10 to 15 minutes.
3) Add remaining ingredients to stir in.

SERVING
4) Serve the sauce with any crackers or chips.
