Warm Tomato Pepper Sauce
|Chopped red bell peppers||2 1⁄2 Quart|
|Thinly sliced green onions||5 Cup (80 tbs)|
|Minced garlic||3 Tablespoon|
|Olive oil||1⁄3 Cup (5.33 tbs)|
|California tomatoes||8 Quart, seeded, diced|
|Diced seeded tomatoes||8 Quart (California Variety)|
|Grated parmesan cheese||1 2⁄3 Cup (26.67 tbs)|
|Chopped fresh parsley||1 Cup (16 tbs)|
|Black pepper||2 1⁄2 Teaspoon|
|Cayenne pepper||3⁄4 Teaspoon|
1) Use a large skillet to sauté bell peppers, onions and garlic in oil over medium-high heat until vegetables are crisp-tender.
2) Add tomatoes to stir in and cook over high heat until sauce thickens, 10 to 15 minutes.
3) Add remaining ingredients to stir in.
4) Serve the sauce with any crackers or chips.
