Ingredients
  Ripe tomatoes 7 Gallon
  Onion 2⁄3 Cup (10.67 tbs), chopped
  Sugar 1 1⁄2 Cup (24 tbs)
  Nutmeg 1 Teaspoon
  Hot sauce 3⁄4 Teaspoon
  Salt 5 Teaspoon
  Ginger 2 Teaspoon
  Cinnamon 1 Teaspoon
  Dry mustard 1 Teaspoon
  Vinegar 2 Cup (32 tbs)
Directions

GETTING READY
1)Peel and core tomatoes.
2)Using a food processor, grind tomatoes and onion.

MAKING
3)Take a large heavy kettle and add tomatoes and onion to it.
4)Fold in remaining ingredients. Bring to boil, stirring continuously.
5)Decrease heat and simmer for 2 hours or until thickened. Stir frequently.
6)Pour into sterilized 1-pint jars and seal.

SERVING
7)Use the tomato catsup and when needed.
