Marsala Or Madeira Foam Sauce
|Marsala/Dry madeira||150 Milliliter|
|Castor sugar||3 Tablespoon|
|Double cream||4 Tablespoon (For Cold Sauce Only)|
A rich and sweet sauce.
Put all the ingredients in the top half of a double boiler and whisk over boiling water until the sauce becomes a thick foam.
Immediately remove from the heat as overcooking will cause the sauce to curdle.
Transfer to a jug and either serve at once or stand in a pan of warm, not boiling, water until required.
