Kidneys In Sherry Sauce

Ingredients
  Butter 50 Gram
  Onion 1 , peeled and chopped
  Lamb kidneys 8
  Button mushrooms 50 Gram, cleaned
  Flour 45 Milliliter (3 Tablespoon)
  Stock 300 Milliliter
  Sherry 90 Milliliter (6 Tablespoon)
  Red currant jelly 15 Milliliter (1 Tablespoon)
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper To Taste
Directions

MAKING
1.Heat butter and saute onion until golden brown.
2.Rinse, skin and hoolow the kidneys; chop them into 3 pieces each.
3.Put kidneys and mushrooms in the pan and suate for 5 minutes.
4.Put flour, stock, sherry and red curreant jelly along with seasoning.
5.Let the ingredients boil; once done cook for 5 minutes after covering.

SERVING
6.Serve warm.

Tip
Kidney is sherry sauce can be frozen. For serving the frozen dish needs to be reheated at 180 degrees C for 40 minutes.
