Noisettes Of Lamb With Cucumber And Chive Sauce

Ingredients
  Oil 1 Teaspoon
  Lamb noisettes 3 Ounce (2 X 75 Gram)
  Cucumber 2 Ounce, peeled and grated (50 Gram)
  Flour 1 Teaspoon
  Dry white wine 2 Fluid Ounce (50 Milliliter)
  Stock 2 Fluid Ounce (50 Milliliter)
  Salt To Taste
  Freshly ground black pepper To Taste
  Cucumber strips 3
  Chives 1 Teaspoon, chopped
Directions

MAKING
1) In a pan, saute the noisettes in the oil for 10 min, turning just once.
2) Move the noisettes to one side of the pan, stir in the cucumber, then the flour and cook gently for 1-2 min to absorb the pan juices.
3) Lastly, stir in the wine, stock, salt and pepper into the pan, allow to the boil then simmer for about 2-3 min.

SERVING
4) Place the noisettes coated with the sauce on a nice dish, garnish with the chopped chives and cucumber strips and serve immediately.
