Snow Pudding With Nesselrode Sauce

Ingredients
  Unflavored gelatin 2 Tablespoon
  Water 1 Cup (16 tbs)
  Sugar 1 1⁄4 Cup (20 tbs)
  Salt 1⁄8 Teaspoon
  Boiling water 1 1⁄4 Cup (20 tbs)
  Lemon rind 2 Teaspoon, grated
  Lemon juice 1⁄2 Cup (8 tbs)
  Egg whites 4 , beaten
Directions

Sprinkle gelatin over water.
Add sugar, salt, and boiling water.
Stir until completely dissolved.
Add lemon rind and lemon juice.
Blend thoroughly.
Set in pan of ice water and chill until mixture starts setting and is the consistency of unbeaten egg whites.
Stir occasionally.
Add egg whites slowly to lemon mixture.
Beat until mixture begins to hold its shape.
Pour into 1 1/2 quart mold.
Chill for several hours or until firm.
Unmold and serve with Sauce.
