Foil Poached Salmon With Dill And Avocado Mayonnaise

Ingredients
  Whole salmon 119 Ounce (Ask Your Fishmonger To Clean And Gut It, 3.5 Kilogram / 7 Pound 7 Ounce)
  Olive oil 1 Teaspoon (For Greasing)
  Onion 1 Small, very thinly sliced
  Bay leaves 4
  Dill 20 Gram
  Dry white wine 6 Tablespoon
  Ripe avocados 3 (Preferably Hass)
  Mayonnaise 7 Fluid Ounce (200 Milliliter)
  Lemon 1 Large, zested and juiced
  Cucumber 1⁄2 , peeled, deseeded and diced
Directions

GETTING READY
1. Preheat your oven to 150C/fan 130C/gas 2; oil a sheet of extra wide foil and put the salmon in it
2. In the body cavity, add the onion, bay leaves dn half of the dill; spoon over the wine and seasin with salt and pepper
3. Bring the ends of the foil around and seal to make a parcel

MAKING
4. Place te salmon into a baking tray, bake for an hour and allow to cool for ten minutes wihtout opening the parcel
5. In a food processor, blend the flesh of avocado with mayo, lemon juice and zest and seasoning; add it all to the bowl
6. Chop up some dill and add it along with the cucumber and transfer it into a serving bowl; chill for about three hours
7. Unwrap the salmon and remove the skin and fins, lift it onto a platter and garnish with cucumber, watercress, dill and lemon wedges

SERVING
8. When serving, Remove the chunky fillets and remove the onion and herb filling
9. Serve with Avocado mayo, salad greens and buttered new potatoes
