New York Steak With Tobacco Onions Anasazi Bean Chili And Blackstrap Barbecue Sauce

Ingredients
For anasazi bean chili
  Onion 1 Medium, chopped
  Red bell pepper 1 , seeded and diced
  Yellow bell pepper 1 , seeded and diced
  Poblano 1 , seeded and diced
  Ancho chili 2 , seeded and diced
  Anasazi beans 1 Cup (16 tbs), soaked in water for 8 hours or overnight
  Tomatoes 4 , peeled and diced
  Dried oregano 1 Teaspoon
  Dried thyme 1 Teaspoon
  Beer 1 1⁄2 Cup (24 tbs)
  Chicken stock 1⁄2 Cup (8 tbs) (As Needed)
  Onion 1 , minced
  Vegetable oil 1 Tablespoon
  Garlic 4 Clove (20 gm), minced
  Red wine vinegar 1⁄4 Cup (4 tbs)
  Rice vinegar 1⁄4 Cup (4 tbs)
  Cider vinegar 1⁄4 Cup (4 tbs)
  Ground cloves 1⁄2 Teaspoon
  Ground allspice 1⁄2 Teaspoon
  Ground cumin 1 Teaspoon
  Blackstrap molasses 1⁄2 Cup (8 tbs)
  Brown sugar 1⁄4 Cup (4 tbs)
  Mole sauce 1⁄4 Cup (4 tbs)
  Ketchup 1 1⁄2 Cup (24 tbs)
  Worcestershire sauce 1 Teaspoon
For tobacco onions
  Onion powder 1 Tablespoon
  Garlic powder 1 Tablespoon
  Ground cayenne 1 Teaspoon
  White pepper 1 Teaspoon
  Paprika 1⁄2 Teaspoon
  Onions 2 , sliced
For steak
  New york strip steaks 48 Ounce (6 Steaks, 8 Ounce Each)
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1)To prepare chili, saute onion, poblano, bell pepper and chili in oil. Add in garlic, mole paste and continue to saute.
2)Mix in tomato, beans, cimun, thyme, beer and oregano. Simmer for 1 hour or 1 ½ hour until beans are soft. Season to taste.

MAKING
3)To prepare sauce, stir fry onion, garlic and 3 vinegars. Reduce volume to half by simmering.
4)add in all spice, cumin, cloves, molasses, sugar, mole paste, ketchup, Worcestershire sauce and for 20 minutes simmer.
5)To prepare onions, add in the seasoning, and deep fry to crispness.
6)To prepare steak, gril seasoned ove medium hot coals. Let internal juices get thoroughly incorporated.

SERVING
7)On serving plate, place a hot chili at center, top with steak followed by onions. Drizzle sauce around plate and serve hot.
