Game Sausage With Smoked Apples Grilled Onions And Maple Cream Sauce

|Orange||1 , juiced and zested|
|Fresh sage sprigs||2|
|Fresh thyme sprigs||2|
|Brandy||1⁄4 Cup (4 tbs)|
|Venison||1 Pound, cut into 1-inch cubes|
|Lean pork||1 1⁄2 Pound, cut into 1-inch cubes|
|Fat back||1⁄2 Pound, cut into 1 -inch cubes|
|Smoked apples||2 , chopped|
1)To Prepare Smoked Apples: Set up a smoker as per the manufacturer's directions.
2)Slice the apples into halves.
3)On the smoker rack, keep them flesh side down.
4)Close the smoker lid and smoke the apples for 15 to 20 minutes.
5)Remove from smoker and cool.
6)Core, peel, and thinly slice the apples and set them aside.
7)To Make the Sausage: Take a large bowl and add in orange juice and zest, herb sprigs, juniper berries, peppercorns, brandy, salt, meats, and chopped apples.
8)Toss and mix well and allow it to stand for 45 minutes.
9)Through sausage grinder fitted with large grinding plate, Push the sausage mixture
10)Take away the plate and unscrew the blade and fit sausage grinder with funnel to make sausage casings.
11)Form sausages and tie off the edges..
12)Heat a large saucepan. Pour water upto its three- fourths level and bring it to a boil.
13)Put in the sausage, anf reduce heat to a low flame.
14)Poach the sausages for 20 minutes.
15)Remove from heat and drain well.
