Aurora sauce, or sauce aurore in French, is a baisc Béchamel sauce with the addition of tomato concentrate or you could use passata. It is perfect with eggs and cauliflower.Full recipe at http://saucerecipes.tv/featured-recipes/aurora-sauce.
1 Cup (16 tbs)
Tomato paste/3 tablespoons passata pureed and sieved tomatoes
1 Tablespoon, cut into small pieces
Warm the Béchamel sauce in a medium saucepan.
Add the cream and mix to combine.
Simmer for 5 minutes, stirring.
Add the tomato paste or passata, stirring and tasting as you go, until the color and flavor are to your liking.
Simmer for 5 minutes.
Season to taste with salt, pepper and nutmeg.
Add the butter bit by bit, stirring to incorporate each piece.
