Cabbage With Cheese Sauce

Ingredients
  Bacon 1⁄4 Pound
  Medium white sauce 2 Cup (32 tbs)
  Cabbage head 1 Medium
  Sharp cheddar cheese/Sharp process cheese 1⁄4 Pound, shredded
  Salt To Taste
  Pepper To Taste
Directions

Fry bacon until crisp; remove from pan.
Use fat for making white sauce: use 1/4 cup fat; stir in 1/4 cup flour.
Gradually stir in 2 cups milk.
Cook over low heat, stirring constantly, until smooth and thick.
Cut cabbage into wedges; cook in small amount of boiling salted water until tender, about 10 minutes.
Add cheese to white sauce and heat until melted; season.
Put drained cabbage on platter; cover with cheese sauce and sprinkle with crumbled bacon.
Makes 4 servings.
