Cranberry Sauce Cake
|Flour||3 Cup (48 tbs)|
|Baking soda||2 Teaspoon|
|Mayonnaise||1 Cup (16 tbs)|
|Whole cranberry sauce||16 Ounce (Reserving 1/4 Cup)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Grated orange rind||1 Tablespoon|
|Sugar||1 Cup (16 tbs)|
|Chopped nuts||1 Cup (16 tbs)|
Grease 9-inch tube pan.
Line bottom with waxed paper.
Mix dry ingredients into large bowl.
Add other ingredients, except 1/4 cup reserved cranberry sauce, and mix well.
Bake in 350-degree oven for 1-1/4 hours.
Remove from pan and cool completely before icing.
Icing: Mix 3 tablespoons soft butter with 2 cups confectioners' sugar and 1/4 cup reserved cranberry sauce.
Beat until creamy and spread on cake.
