Chicken In Green Sauce

Ingredients
  Chicken 2 1⁄2 Pound
  Celery stalks 3 , cut into chunks
  Onion 1 , cut into chunks
For green sauce
  Shredded jack cheese 1 1⁄2 Cup (24 tbs)
  Butter 2 Tablespoon
  Green peppers 2 , diced
  Onions 2 , diced
  Tomatoes 2 Large, diced
  Anaheim chili 3 , roasted, peeled & diced
  Salt To Taste
  Pepper To Taste
Directions

Place chicken in dutch oven with the celery, onion, saltand pepper.
Add water to cover and simmer until tender, about 40 minutes.
Let cool, remove meat from the bones and shred.
Vegetables: Combine all the ingredients in a large skillet.
Cook until soft.
Add the shredded chicken and green sauce and mix well.
Tkste for seasoning.
Place in an ovenproof dish, top with cheese and bake in a 350° oven for 20 minutes or until cheese is melted.
Serve hot.
