|Milk/Light cream||1 Cup (16 tbs)|
|Tomato paste||2 Teaspoon|
|Coarsely chopped cooked shrimp||1 Cup (16 tbs)|
|Dry sherry||2 Tablespoon (Optional)|
1) In a saucepan, melt the butter over a low heat, blend in the flour and mix well.
2) Then gradually stir in the milk, stir continuously and cook until smooth.
3) Add rest of the ingredients, stir and cook for about 5 minutes.
4) Serve immediately with the poached, baked, or broiled white fish and seafood souffles or mousses.
