Potatoes In Parsley Sauce

Ingredients
  Olive oil 3 Tablespoon
  Finely chopped onion 1⁄2 Cup (8 tbs)
  Finely chopped parsley 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), minced or mashed (1 Large One)
  Boiling potatoes 4 Medium, peeled and cut into 1/4-inch slices
  Chicken bouillon/Beef bouillon 1 1⁄2 Cup (24 tbs)
  Salt To Taste
  Pepper To Taste
Directions

In olive oil in a large kettle slowly saute onion, parsley, and garlic until soft, about 15 minutes.
Add potatoes and cook, gently stirring, for a few minutes.
Add bouillon and salt and pepper.
Bring to a boil; reduce heat, cover, and simmer until potatoes are tender.
Taste and correct seasoning.
Makes 4 to 6 servings.
