Brown Sauces And Gravies
|Pan drippings||1⁄4 Cup (4 tbs), from roasting, round out amount as needed with bacon drippings or butter|
|Hot water/Vegetable cooking water / beef broth / any combination of the 3||2 Cup (32 tbs)|
|Unsifted flour||1⁄4 Cup (4 tbs)|
1) In a large skillet, add the roasting pan drippings, then stir in the flour and cook over a medium heat until light brown.
2) Pour in the water mixture, then stir and cook until thickened. Lower the heat and simmer for about 3-5 minutes.
3) Add the gravy browner, if using and season with the salt and pepper to taste.
4) Strain the gravy through a fine sieve for smooth texture.
5) Use as required.
