Ingredients
  Butter 30 Milliliter
  Diced ham 125 Milliliter
  Diced mushrooms 125 Milliliter
  Green onions 125 Milliliter
  Demi glace 375 Milliliter
  Sherry 125 Milliliter
  Heavy cream 60 Milliliter
Directions

In a sauce pan melt the butter, saute the ham, mushrooms and green onions.
Add the demi-glace and sherry.
Reduce heat and simmer to half of the sauce's volume.
Add cream and simmer for 2 minutes longer if using.
