Low Calorie Hollandaise Sauce
|Skim milk||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Red pepper||1 Dash|
|Imitation butter flavoring||3 Drop|
|Cornstarch||1 1⁄2 Teaspoon|
Heat milk in saucepan until bubbles form around edge.
Combine egg yolks, salt, red pepper, lemon juice, flavoring, and cornstarch in electric blender, cover and swirl until smooth.
Slowly, add hot milk to mixture with blender on mediumspeed.
Pour mixture into the saucepan in which milk was heated.
Heat over mediumheat until it reaches boiling, stirring often.
Serve over Eggs Benedict or hot cooked vegetables of your choice. (45 calories per tablespoon)
