Chef K'S Shrimp In Apple Chocolate Sauce
|Large shrimp||450 Gram, peeled and deveined|
|Safflower oil||30 Milliliter|
|Apples||250 Milliliter, peeled, cored, diced|
|Light cream||250 Milliliter|
|Apple brandy||60 Milliliter (Calvados)|
|Grated white chocolate||80 Milliliter|
Butterfly the shrimp by making an incision with a small knife down the back.
Heat the butter and oil together in a large skillet.
Quickly saute the shrimp in the oil.
Remove and reserve hot in the oven.
Add the apples and mushrooms to the skillet.
Saute 3 minutes.
Sprinkle with flour, cook for 2 minutes over low heat.
Add the cream and brandy, simmer to a smooth sauce.
Blend in the chocolate and cook for 1 minute.
Pour sauce over shrimp and serve.
