Chef K'S Shrimp In Apple Chocolate Sauce

Ingredients
  Large shrimp 450 Gram, peeled and deveined
  Butter 45 Milliliter
  Safflower oil 30 Milliliter
  Apples 250 Milliliter, peeled, cored, diced
  Mushrooms 80 Gram
  Flour 30 Milliliter
  Light cream 250 Milliliter
  Apple brandy 60 Milliliter (Calvados)
  Grated white chocolate 80 Milliliter
Directions

Butterfly the shrimp by making an incision with a small knife down the back.
Heat the butter and oil together in a large skillet.
Quickly saute the shrimp in the oil.
Remove and reserve hot in the oven.
Add the apples and mushrooms to the skillet.
Saute 3 minutes.
Sprinkle with flour, cook for 2 minutes over low heat.
Add the cream and brandy, simmer to a smooth sauce.
Blend in the chocolate and cook for 1 minute.
Pour sauce over shrimp and serve.
