Sauce Piquant is a classic Cajun recipe. It is a bit spicy and is served warm.
Ingredients
  Butter 1 Tablespoon
  Flour 1 Teaspoon
  Sweet peppers 2 , minced
  Vinegar 1⁄3 Cup (5.33 tbs)
  Stock 2⁄3 Cup (10.67 tbs)
  Tarragon 1⁄2 Teaspoon, minced
  Salt To Taste
  Lemon juice 1⁄2 Teaspoon
Directions

MAKING
1. In a pan, melt butter.
2. Add flour and brown it.
3. Add stock gradually.
4. Add vinegar and stir it continuously till it is of a smooth consistency.
5. Add seasoning and cook it slowly for 10 minutes.
6. Add peppers, parsley, tarragon and lemon juice. Remove from flame.

SERVING
7. Serve Sauce Piquant over hot rice.
