King Prawns In Lime And Dill Mayonnaise

Ingredients
  Baking potatoes 4 Large
  Chopped dill 60 Milliliter (4 Tablespoon)
  Olive oil 3 Fluid Ounce (90 Milliliter)
  Lemon juice 1 Teaspoon
  Cooked prawns 20 Large, shelled
  Lime juice 1 Teaspoon
  Mayonnaise 10 Fluid Ounce (300 Milliliter)
  Cherry tomatoes 12 , halved
  Dill sprigs 1
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1)Place potatoes in oven to bake.
2)In a bowl, mic together 30 ml of dill, lemon juice, olive oil and seasoning. Pour this marinate over the prawns.
3)Let marinate.
4)In a separate bowl, add zest and juice of lime, remaining dill, mayonnaise, black pepper and beat to blend well. Refrigerate.

MAKING
5)Drain prawns and mix with tomatoes and mayonnaise.
6)Halve the baked potatoes and fluff the flesh.
7)Spoon filling over halved surface.

SERVING
8)Garnish with dill and serve hot with lime rind and pepper.
