Basil Tomato Sauce's picture
  Olive oil 5 Tablespoon
  Onions 2 , chopped
  Red pepper 1 , cored, seeded and chopped
  Canned tomatoes/1 1/2 pound fresh tomatoes 2 Pound, skinned, halved and seeded
  Sugar 1⁄2 Teaspoon
  Garlic cloves 1 Large, chopped
  Fresh basil leaves/1 teaspoon dried basil 1⁄4 Cup (4 tbs) (Small Handful Of)
  Salt To Taste
  Pepper To Taste

Heat the oil in a saucepan, add the onions and cook for 5 minutes, stirring occasionally.
Add the celery and red pepper.
Cook for a further 2-3 minutes, then add the tomatoes, sugar, garlic, seasoning and basil, if you are using dried basil.
Let the sauce simmer, uncovered, for 25-30 minutes.
Allow to cool slightly, then pour into a blender or food processor.
Add the fresh basil, if using, and blend until smooth.
This sauce freezes beautifully, and keeps very well in the refrigerator for 2-3 days.
