Combine garlic and oil.
Rub thoroughly into meat and sprinkle generously with salt and pepper.
Let roasts stand at room temperature for 2 to 3 hours.
Prepare charcoal grill and preheat oven to 400°F Grill meat very briefly just to seal in juices.
Transfer to rack set in roasting pan and roast to desired doneness, about 45 to 60 minutes for medium-rare.
Remove from oven and let cool.
Wrap in foil and refrigerate overnight.
