Fried Beef With Broccoli And Oyster Sauce

Ingredients
  Beef 4 Ounce (125 Grams)
For marinade
  Soy sauce 1 Teaspoon
  Sherry 1⁄2 Teaspoon
  Cornflour 1⁄2 Teaspoon
  Sugar 1⁄4 Teaspoon
  Salt 1 Pinch
  Broccoli/Spinach 4 Ounce (125 Grams)
  Chopped onion 1 Teaspoon
  Sugar 1⁄2 Teaspoon
  Oyster sauce 2 Teaspoon
Directions

Cut the beef into thin slices, and marinate for 30 minutes.
Wash and trim the broccoli into 8-cm (3-in) lengths.
Deep-fry the beef for 10 seconds and then drain well.
Heat 2 tablespoons of oil in a frying-pan and fry the broccoli for 30 seconds over a moderate heat, stirring all the time.
Add 5 tablespoons of water, turn up the heat and cook for 3 minutes, until the broccoli is just tender. (If using frozen broccoli, defrost, fry in 2 teaspoons of oil and then cook in 1 tablespoon of water until all the water has evaporated.)
Remove, drain if necessary, and arrange on the serving dish.
Re-heat the frying-pan with 2 teaspoons of oil, fry the onion for 15 seconds, and then add the beef.
Sprinkle with sugar, and stir-fry for 20 seconds.
Lay the meat on the broccoli, pour over the oyster sauce and serve.
