Midwestern Barbecue Sauce

  Vegetable oil 2 Tablespoon
  Yellow onion 1 , chopped
  Finely chopped celery 75 Gram (1/2 Cup Or 2 1/2 Oz)
  Catsup 310 Milliliter (1 1/4 Cups Or 10 Fl Oz)
  Cider vinegar 125 Milliliter (1/2 Cup Or 4 Fl Oz)
  Water 125 Milliliter (1/2 Cup Or 4 Fl Oz)
  Sugar 90 Gram (1/3 Cup Or 3 Oz)
  Cayenne pepper 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon

In a saucepan over medium-high heat, warm the oil.
When hot, add the onion and celery and cook, stirring, until the vegetables have softened, about 7 minutes.
Add the catsup, vinegar, water, sugar, cayenne and salt and stir well.
Bring to a boil, then reduce the heat to low, cover partially and simmer until the sauce has thickened slightly, 15-20 minutes.
Remove from the heat and let cool.
