Joyce's Favorite Tomato Sauce
|Tomato paste||6 Ounce (1 Can)|
|Italian plum tomatoes||5 Cup (80 tbs), seeded|
|Green pepper||1 Medium, minced|
|Onion||1 Small, minced|
|Garlic||1 Clove (5 gm), minced|
|Olive oil||1 Tablespoon|
Place tomato paste and tomatoes in blender; blend until smooth.
Turn mixture into a heavy-bottomed stainless steel pan; bring just to boil.
Reduce heat, add remaining ingredients, and simmer, uncovered, 1 hour or until sauce is well flavored.
Remove bay leaf and taste.
Use immediately or freeze until needed.
Recipe can easily be doubled, depending upon available tomatoes.
