Apricot Puree With Orange Sauce

Ingredients
  Dried apricots 250 Gram
  Water 2 1⁄4 Cup (36 tbs)
  Orange 1 , rind grated
For sauce
  Crumbled paneer 2 Tablespoon (Made From Fat-Free Milk, Fresh Cottage Cheese)
  Curd 4 Tablespoon, whisked (Made From Fat-Free Milk)
  Orange juice 5 Teaspoon
  Sugar free sweetener tablets 2 , powdered
Directions

Wash apricots and soak in water for 5-6 hours till fruit is soft and swollen.
Remove seeds and discard.
Reserve water.
Place apricots with reserved water in a medium-sized pan over moderate heat and cook till tender.
Remove from heat, pour in orange juice, rind and sweetener and blend till smooth.
Spoon into 6 wine glasses or individual dessert bowls.
Blend paneer, curd and juice for sauce till smooth.
Add sweetener and blend till well mixed.
Spoon over apricot puree and chill.
Serve chilled.
