Steamed Artichokes With Lemon Dill Mayonnaise

Ingredients
  Lemons 2 , juiced
  Artichokes 4 Large
  Celery seeds 1 Teaspoon
  Dried dill 1 Teaspoon
For lemon dill mayonnaise
  Homemade mayonnaise/Prepared mayonnaise 1 Cup (16 tbs) (1 Recipe)
  Lemon 1 , juiced
  Finely chopped fresh dill/2 teaspoons dried dill 1 Tablespoon
  Freshly ground black pepper To Taste
Directions

Place the lemon juice in a bowl of water.
Trim the artichokes by cutting off the stalks and removing the tough outer leaves.
Slice about 1/2 of the artichoke off the top, cutting off inedible, prickly leaves and barely exposing the purple center or choke.
Trim the tips off any remaining prickly leaves with scissors.
Reserve the prepared artichokes in the bowl of lemon water to prevent discoloration.
Place about 4 inches of water, celery seeds, and dill in the bottom of a steamer.
Place the artichokes in the steamer basket and steam until tender.
Cooking time will vary depending on the size of the artichoke, from 40 to 60 minutes.
For Lemon Dill Mayonnaise
Combine all the ingredients in a bowl and adjust seasonings to your taste.
