Tripe in Spicy Tomato Sauce
|Tripe||6 Pound, rinsed and cut into 1-inch squares|
|Vegetable oil||1⁄3 Cup (5.33 tbs)|
|Tomato sauce||2 Cup (32 tbs)|
|Cayenne pepper||1 Tablespoon|
|Garlic||5 Clove (25 gm), chopped|
|Ground coriander||1 Teaspoon|
|Water||2 1⁄2 Quart|
Heat the oil in a large heavy pot and, when it is very hot, add the tomato sauce, cayenne pepper, garlic, a pinch of coriander, the bay leaves, mint, salt and pepper.
Add the tripe and enough water to cover the mixture.
Bake the tripe in a preheated 325° F. [170° C] oven for four hours, or until tender.
