Prune Cottage Pudding With Orange Sauce
|Shortening||1⁄4 Cup (4 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Grated orange rind||2 Tablespoon|
|Sifted cake flour||1 Cup (16 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Buttermilk||1⁄3 Cup (5.33 tbs)|
|Pitted chopped cooked prunes||1 Cup (16 tbs)|
|Orange sauce||3 Tablespoon|
Add sugar gradually, beating until light and fluffy.
Add egg and orange rind and beat thoroughly.
Add sifted dry ingredients alternately with buttermilk, beating until smooth.
Fold in prunes.
Pour batter into greased medium-size muffin tins.
Bake in preheated moderate oven (350°F.) for about 40 minutes.
Turn out on rack.
Serve hot with Orange Sauce.
